This is the cake at the centre of a Caribbean Christmas: dense, moist, and unapologetically rich. Dried fruits are steeped in red wine and white rum, then folded into a dark, spiced batter and baked low and slow.
Every cake is baked to order — no shelf stock, no shortcuts. Order early, because December fills up fast.
